Ras Malai

Ingredients for Ras Malai: milk 1.5 litre vinegar 2 table spoons water 2 table spoons corn starch 1/2 table spoon sugar 2 cups water 6 cups Ingredients for milk: milk 500ml dry fruits 1/2 cup cardamom 3  sugar 1/2 cup saffron 1 pinch  Method of Ras Malai: Boil 1.5 litre milk in a pan and mix vinegar and water in a small bowl and add it to boiled milk slowly and curdle it.Take out in a muslin cloth and add chilled water to stop the cooking process. Squeeze all the water from it.Boil 2 cup sugar by adding 6 cups of water in a big pan and let it come to a boil.Take curdle milk in a plate and kneed it till it becomes smooth and add corn starch and kneed it again.Make small size of balls and flattened it and add them in to boiling sugar syrup.Let them boil for 15 minutes and immediately add it into a chilled iced water and add sugar syrup in it.Let it cool for 30 minutes.Than add Ras Malai into sweetened milk and set it for 4 hours in the fridge. Chakri (spiral snack)

Ingredients: rice flour 1 cup gram flour 1/2 cup salt green chilli 2 sesame seeds 1 table spoon  carom seeds 1 tea spoon  turmeric powder 1 tea spoon  ghee 1 table spoon water  oil for frying Method: Take rice flour and gram flour in a bowl and add carom seeds, sesame seeds, turmeric powder, crushed green chillies ,salt according to taste ,ghee and mix it nicely.Add little water at a time and make dough.Now put the dough in chakri maker and make spiral shape and fry it on medium hot oil. Serving: Serve this crispy delicious snack with tea or enjoy it like as it is.

Mix fruit Shri Khand

Ingredients: plain curd 750g mango 1/2 cup  strawberry 1/2 cup pomegranate 1/4th cup  sugar 1/2 cup Method: Hung curd for 20 hours in a muslin cloth in fridge.Take hung curd in a bowl add sugar and mix it nicely.Add chopped mango, strawberry and pomegranate seeds.Put it to fridge for another 3 hours to set. Serving: Serve this mouth watering Mix fruit Shri Khand with hot Puri or Fulka Roti.

Khaman Dhokla

Ingredients: gram flour 1 cup crystal citric acid 1 tea spoon  salt 1/2 table spoon  baking soda 1 tea spoon  sugar 2 table spoon  turmeric 1/4th table spoon  oil 2 table spoon  mustard seeds 1 tea spoon  green chilli 1 curry leaves 5-6 water  fresh coriander leaves 1 table spoon  Method: Take gram flour in a bowl and add crystal citric acid ,salt ,turmeric and mix it nicely.Add water little by little and make a smooth bater till crystal of citric acid melt completely.Heat water in steamer along with oil greased tray.Add baking soda and mix it in one direction for 30 seconds when bater becomes fluffy and airy pour it in tray and steam it for 15 minutes.Heat oil in a pan and add mustard seeds ,curry leaves, sugar, and 100ml water.Pour sugar water on to steamed Dhokla. Sprinkle fresh coriander leaves. Serving: Serve this delicious Gujarati Khaman Dhokla with Kadhi and sev on top.This can be enjoyed in breakfast or lunch anytime you want.
